Meet Amanda Manyatshe, who together with Zuko (@chef_sage) will be preparing a plant-based lunch for us at #SAPOCTable conference. Amanda is a private chef. She says: “I dabble in recipe development, food photography and styling in my free time.”

Question: Fill in the following: Transformation in this industry (name your specific field or cause) will happen when….
Answer: Transformation will happen once people realize that when you collaborate with someone, you don’t lose your chance to shine. A candle doesn’t shine less bright by lighting another candle. Giving others a chance to grow helps uplift all of us, it doesn’t have to be a small few who do it all. We can’t grow if we do not include each other.
Question: What’s your goal/vision for this conference?
Answer: My hope for #SAPOCTable conference is that gives us a voice. It actually makes me feel that we have a space at the table. That mense can shift a bietjie and we can all sit together. We have so much knowledge and flavour to add to the story. The vision? The realization of the importance of representation in all spheres including food. Seeing, knowing and tasting our flavours in dishes from espaza to top fine dining establishments. The goal? To create a network where we can find help, advice, support. People who see you and your vision and help you grow.
Question: What would you love people to know about you and your work?
Answer: Both myself and my work are constantly changing, evolving and adapting. I am learning to unlearn. I am learning. Each day brings new growth and insight
Question: What are you preparing for lunch at the #SAPOC conference?
Answer: For our menu, Zuko and I want to incorporate indigenous ingredients to add some local flavour. We’ve included some traditional dishes with modern twists. The idea is to bring everyone together to share a meal as you would with your family. From the indigenous herbs flowing through the salads to the flavourful punch in the curry, we’ve incorporated local flavours to bring you a fresh, seasonal lunch with some modern accents. To add to the cultural mix we have a breyani dish generously offered to us by Gadija Khan @kaapsekos.
